Although the weather has been wonderful, the honeymoon has to end sometime; winter will eventually be here in full force. That’s why it’s so important to enjoy these few precious moments of sunshine-and-mild-temperatures-induced bliss while they last!

Actually, there is; Camille’s signature Creamy Tuscan Tomato soup. As the weather turns colder and summer transitions to fall, the search for comfort foods that are both healthy and satisfying switches into full-throttle.

Found in many fruits, lycopene is a potent antioxident belonging to a group called “cartenoids,” which give orange, yellow, and red fruits and vegetables their colors.

Lycopene is most famous, however, for its cancer-fighting power. A recent Harvard study, which followed 48,000 men for six years, concluded that men were lowering their risk of prostate cancer by 45% – nearly half – just by eating ten or more servings of tomatoes per week.

Cooking tomatoes increases their lycopene content. In fact, Cornell University food scientists say that the longer you have them in heat, the more the lycopene increases.

Eat, Relax and Enjoy is the motto at Camille’s Sidewalk Cafe, which is not far removed from the casual, easy go-lucky lifestyle of the Italian countryside. The history of the Italian panini is often linked to memories of summertime picnics, rich country wine and crusted Focaccia bread.
 
According to Italians, the panini sandwich, the original version of panini, would mostly be a striped down version of today’s sandwich with only a single filling, not grilled and most often prepared just before eating them.
 
Cured meats were the filling of choice; salami, prosciutto and mortadella to name a few. A rustic Focaccia would commonly be used as the bread.
 
Cheeses were a common filling as well. The local availability would determine which particular cheese was used. Summer favorites were panini with tomato and mozzarella or tomato and tuna.  
All these account for the core of the Italian culinary panini.
